Mark Young

Chef Mark Young is our Executive Sous Chef, having joined The Backroom at La Cave in 2019. Kiwi Mark began his career in 2000 as commis chef in La Café in Christchurch, New Zealand. He has also worked as Head Chef at the Ibis Hotel Christchurch, Ibis Hotel Perth, Australia and Hotel Jen by Shangri-La Hotel & Resorts, Australia.

With his extensive experience in Western and Asian cuisines, Chef Mark has brought an exciting new dining experience to The Backroom and Marina Grill.

Age Limit / Dress Code

Lunch age limit: three years and older.
Dinner age limit: eleven years and older.

Members and guest are required to dress appropriately in smart-casual attire. No flip-flops, slippers or sports wear. Gentlemen in sleeveless shirts or vests will not be admitted. Dress shorts only; no sports shorts.


Cancellation Policy

Cancellations for restaurant reservations must be made at least 24 hours prior to the reserved date.

Members who fail to abide by our cancellation policy twice will not be permitted to make further reservations for the following 60 days.
